Rhonda's Rhubarb Crisp

This was so yummy at the May 2016 meeting that I had to ask Rhonda Johnson for the recipe to put on the blog. So here it is! Thanks Rhonda!

3 eggs, beaten
2 cups white sugar
½ cups flour
Mix all together with 8 cups cut up rhubarb.

Use pastry blender to mix together:
1 cup softened butter
1 ½ cups brown sugar
1 ½ cups oatmeal
1 cup flour
½ tsp salt

Put rhubarb in a greased 9 x 13” glass/pyrex baking dish.
Cover rhubarb with crumbly topping mix.
Bake at 350 for 1 hour.
