Located in Grantsburg, Wisconsin, the Burnett Garden Club is a non-profit, educational club founded in 1988 and affiliated with the Minnesota State Horticultural Society, the largest organization of it's kind in the nation. We welcome anyone from the area to join our club regardless of county of residence. The club disbanded as a formal organization in December 2018

A wonderful time was had by all!
We had a fun time playing the dice game to distribute gifts and an even better time opening each gift in turn. Rosemary got away too fast to get into the picture. Sorry about that!! We left a space for her between Lucille and Teresa!!
Kris handed out the new 2010 yearbooks. They look great, full of colorful pictures of flowers and gardens. If you were not present, you can get your booklet at the January meeting.
Janet handed out an announcement for the Last Chance holiday craft, gift and bake sale which will be held Saturday, December 12 from 9am to 3pm at 23285 Hwy 87 (watch for signs).
For wonderful last minute gifts, try Mary G.'s Log Cabin handmade soaps at Village Floral in Grantsburg or at the Gallery in Siren.
Have a fantastic Christmas and New Year. We will see everyone January 14 at Crex Meadows Wildlife Education Center, 7PM.

Wayne Anderson is hosting a hands on grape pruning workshop conducted by Kevin Schoessow on Wednesday, December 9, at 1 PM at Wayne Anderson's at 1631 State Road 48 in Frederic, 1 1/2 miles west of Frederic on Hwy 48.
If you wish to participate, Wayne asks folks to dress for the weather and bring a pair of pruning shears. He will be serving hot drinks.

MEETING MINUTES
Thursday, November 12, 2009
The Burnett Garden Club met at 6PM Thursday evening, November 12, 2009 at Grantsburg High School. There were 9 members in attendance: Rosemary Burkman, Janet Byers, Pam Davies, Mary Griesbach, Gaye Gunderson, Kris Henning, Cynthia Leonard, Linnea Seume and Becky Tessman.
Secretary’s Report
Mary G. confirmed that last month’s meeting minutes were posted to the website, and reminded everyone of the request to sign-up for email notifications through the website.
Treasurer’s Report
Becky reported that our August 31 bank statement indicated a balance of $1297.94. After depositing dues, and paying for September meeting expenses and Northern Gardener subscriptions, our balance is now at $1315.10.
Old Business
Election of officers was held with the following slate: President = Kris Henning, VP = Wanda Biorn, Secretary = Mary Griesbach, Treasurer = Becky Tessman, Membership Notification/Webmaster = Pam Davies and Historian = Lucille Danielson. Motion by Janet seconded by Linnea to approve as stated. Motion carried, vote was unanimous. Other committee chairs that indicated their willingness to work the coming year include: Plant Sale = Mary Charmoli, Grantsburg Sign and Christmas in the Park = Becky Tessman and Tours = Kris Henning and Janet Byers. Many thanks for all who participate so enthusiastically and share the load!
New Business
Pam Davies arranged to have the computer in the school room we were using to be set up so she could demonstrate how easy it was to sign up for Garden Club news and notifications through our website. Everyone there signed up. Members are encouraged to visit our website at www.burnettgardenclub.blogspot.com and follow the link and instructions where it says to Sign Up to be on the Email List.
Kris led a discussion of the 3 major destinations being considered for the Club’s major garden tour this summer. After a discussion and vote, It was decided to visit Edelweiss Gardens in Duluth on Sat. August 7. Kris and Janet will make arrangements and notify us of what we need to know.
Mary G. brought information from Burnett County’s Land & Water Conservation Dept.’s 2009-2010 Annual Tree and Shrub Sale. Information and a link will also be available on the Club’s website. (http://www.burnettcounty.com) LWCD offers an excellent variety of native plantings for a very affordable fee. Gaye Gunderson (Webster resident) agreed to be the pick-up person for any of our orders, which will be delivered to Webster at the end of April 2010 for tress and shrubs and early June 2010 for perennials and wildflower seed. The Club will be purchasing bare-root stock to pot up and offer at our Plant Sale. Mary G. will consult with Mary Ch. about this. We approved spending $35 to obtain 7 varieties of native shrubs. Mary G. also reminded us that Polk County has a similar program with a slightly different selection of plants. Kris H. offered to be the pick-up person for any orders that will be delivered to Balsam Lake.
A Plant Sale Potting Party is scheduled at Kris Henning’s home (22163 E. Spirit Lake Rd.) on Thursday, May 6 at 6PM. Our objective is to bring as many transplants from our personal gardens as possible to be potted up for the Sale. Kris will then tend to them for the next 4 weeks, so that what we have to offer for sale will be well-established and looking strong. Becky T. offered to pick-up and deliver any donations from Club members who will not be able to attend the Potting Party.
The following events were mentioned: Madison Garden Expo Feb. 12-14, 2010, Wisconsin Peony Society National Meeting in Janesville June 4-6, 2010 and the National Daylily Society meeting in North Dakota in July. Our sign planting is scheduled for June 3, 2010. Contact is Becky Tessman.
We then concluded our meeting and adjourned to yummy refreshments provided by Rosemary Burkman and Janet Byers, while Rosemary led us in a fun stamping project making 2 Christmas gift bags. We had further “off-the-record” discussion of tweaking of some of our upcoming events, all of which will be reflected in the final published annual booklet (thanks, Kris!) to be distributed at the Christmas party, as well as posted to our fabulous website (thanks, Pam!).
Our next scheduled general meeting is our annual Christmas Party on Thursday, December 10, 2009 at Cynthia Leonard’s home at 23338 Little Wood Lake Road. Festivities begin at 6PM. Bring a guest, a dish to pass and a $10 wrapped gift to share.

Hot Artichoke Crabmeat Dip
Hot Artichoke Crabmeat Dip
1 pkg.cream cheese, softened
1 cup mayo
1 garlic clove, pressed
1 can (14oz)artichoke hearts in water, drained, chopped
1 pkg. (8oz) imitation crabmeat, chopped (1 ½ /c)
¾ grated fresh parmesan cheese
1/3 sliced green onion with tops
1 lemon
1/8 teaspoon black pepper
1/3 c. chopped red bell pepper
Preheat oven to 350 degrees. Combine cream cheese and mayo, mix well. Add garlic. Drain and chop artichoke hearts and crabmeat and add to cream cheese mix. Add parmesan cheese, 1 teaspoon lemon zest, green onions and pepper, mix well. Spoon into ovenproof casserole dish, bake 350 degrees for 25-30 minutes or until edges are golden brown. Sprinkle red peppers and green onion atop and serve warm with toasted bread or crackers. Makes 4 cups.

2010 Planning meeting a Success!
The planning meeting held at Woodlands Pub Grille on Thursday, October 22 was fun and successful. Kristie, Mary G., Pam, Janet and Becky attended. A calendar of meetings and events was hammered out for 2010. Highlights include workshops to make twig trellises and rhubarb leaf birdbaths; presentations on planting and using garlic and on ornamental grasses just to mention a few. We will be asking for input from the club at our next meeting on which of three garden tours members would like to include in our summer schedule--Munsinger Garden in St. Cloud, Rick Rock's Landscaping in Baldwin or Edelweiss Nursery in Duluth. We hope everyone will share any personal experience with these gardens and other attractions in the areas that we might include in the tour since each of these is about 2.5 hours from Grantsburg.

MEETING MINUTES
Thursday, October 8, 2009
The Burnett Garden Club met at 6PM Thursday evening, October 8, 2009 at Holmes Lake Apple Orchard after carpooling from the High School at 5:30PM. There were 11 members and 1 guest in attendance: Rosemary Burkman, Janet Byers, Mary Griesbach, Gaye Gunderson, Theresa Halls, Kris Henning, Alma Karels, Cynthia Leonard, Becky Tessman, Tim Tessman, Mary Ann White and guest Rebecca Wallace. We were hosted by Bob and Joni Hartshorn (and briefly their youngest, Molly).
We were met at the orchard by Bob and Joni Hartshorn who had prepared samples of a wide variety of apples on the tailgate of their truck. We walked the rows of trees and discussed the history of their orchard, the varieties and apple culture. The Hartshorns generously gave everyone in attendance a bag to fill with fresh-picked apples as we toured the grounds – Thank You very much, Bob and Joni! Additional apple-based refreshments were provided by MaryAnn White and Cynthia Leonard. It was a great way to spend a crisp autumn evening in northern Wisconsin!
Kris led a brief business meeting. She confirmed that all current officers are willing to serve in their same roles for another year. Official elections will take place next month. A 2010 planning meeting will be held on Thursday, October 22, 2009 at 5:30 PM at Woodlands Grill for anyone who wants to participate. Mary G. also requested on behalf of webmaster, Pam Davies, for those who have computer access to please sign-up for club notifications through the website. This will eliminate duplicate emailings to members and decrease the workload for Pam. You are requested to do so by the January 2010.
Our next scheduled general meeting is Thursday, November 12, 2009 at 7PM at Grantsburg High School and Rosemary Burkman will be leading us in a craft workshop. A materials and ideas list will be available on our website if needed. Refreshments will be provided by Rosemary Burkman and Janet Byers.

October 8th Meeting at Holmes Lake Orchard
The October meeting will be held on Thursday, October 8 at 6:00 pm at Holmes Lake Orchard. We will carpool at the High School at 5:30 planning to arrive at the orchard at 6:00.
If it is raining at that time (or has been raining most of the day), the trip and the October meeting will be canceled--officers will be elected at the November meeting. If in doubt, call Mary Griesbach or call the orchard at the number below to see if they are open.
Dress for the weather as we will be outside. Bob Hartshorn, the owner, will provide cider, other refreshments will be provided by club members.
We will be learning everything we ever wanted to know about apples and apple trees including which apples are good for pies so come with lots of questions.

Thursday, September 10, 2009
The Burnett Garden Club met at 7PM Thursday evening, September 10, 2009 at Grantsburg High School. There were 12 members and 1 guest in attendance: Ruth Anderson, Wanda Biorn, Janet Byers, Molly Byers, Lucille Danielson, Mary Griesbach, Theresa Halls, Kris Henning, Alma Karels, Cynthia Leonard, Linnea Seume and Mary Ann White. Tim Tessman made a brief appearance to deliver seeds from their gardens for the swap. And we welcomed guest Gaye Gunderson to our group, who is now a new member!
Secretary’s Report: none to report as no minutes are taken during the summer gatherings.
Treasurer’s Report: There was no treasurer’s report due to the absence of Becky Tessman.
Old Business: none.
New Business: Dues and subscriptions to Northern Gardner magazine are due.
We discussed and solicited ideas for next year’s programs, meetings, workshops and refreshments sign-ups. Kris and Lucille will search for original documents describing the structure of the Club and officer duties. Voting will be next month. Kris and Wanda both agreed to serve again. Mary G. was undecided. Becky was not present.
We reviewed the necessary details for next month’s meeting at Bob and Joni Hartshorn’s apple orchard. We deceided to change the carpooling time to 5:30 in order to have enough daylight to enjoy our outdoor activities. The meeting will cancel if raining, otherwise be advised to dress for the weather.
Kris then led us in a bulb-forcing workshop, all materials provided courtesy of the Club! Available to pot up were tulips, narcissus and iris. Everyone went home with 1-2 pots of hope to store in their refrig for a few weeks.
We then broke for refreshments provided by Theresa and Molly and also proceeded to share seeds and plants generously shared between members. Everyone went home with new things to get established before freeze-up!
Our next scheduled meeting is Thursday, October 8, 2009 at Holmes Lake Apple Orchard. We will be carpooling from the high school at 5:30PM. Directions will be available via email and on the website. Refreshments will be provided by MaryAnn White and Cynthia Leonard.

Bulb Forcing Workshop: There should be enough bulbs for about 15 people to do up 2 pots each of different bulbs—daffodils, hyacinths, and crocus—to be forced. I will have handouts for instructions, and will get soil and bring what pots I have. If members could also bring some 6-8” plastic pots (not deep gallons), then we should have enough to go around. If members wish to participate, they will need a cool, dark place where the bulbs will not freeze so they can grow and form roots for three months (like an old refrigerator, cool closet, or attached but unheated garage). People will need to know that they may get dirty. This will be fun!
This will be our annual Member’s Plant/Seed Exchange night. Members can look around their beds for overgrown or crowded plants and divide them to make room for new stuff next year! Please bring LABELLED plant divisions or seeds to share with the group, and also bring extra bags for plants and some envelopes for seed sharing. Each contributing member will tell about what they brought to share, and then the frenzy begins! It’s better than Dayton’s 13-hour sale!
September is our traditional time to start looking ahead to the next year. Members can volunteer to be officers, offer suggestions for the coming year’s programs and tours, sign up for refreshments, and pay their 2010 dues (the MSHS magazine dues, too). We usually do this for both the Sept. & Oct. meetings, with the actual elections at the October meeting to take office in November.

Garden Tour Schedule for July 16
The first stop will be Virginia Henessey's on Hwy 70 in Alpha across from the cheese store.
The second stop will be at Mary Griesbach's at 25337 County Road F, north of Grantsburg, 2nd residence on the left. From downtown Grantsburg take Madison west to Oak Street, turn right (north), at Crex Ave (D), turn right and follow this road to F. (I hope that's right!)
The last garden on the tour will be at Mary Charmoli's at 9664 County Road D in Webster, (go back to D and take it east about 10 miles to Charmoli's). Becky and Tim Tessman, Lucille Danielson and Mary Charmoli will provide the refreshments.

Seven create beautiful fairy gardens
Seven members of the Burnett Garden Club gathered at the Spirit Lake home of Kris H on May 14 with empty containers. We got our hands a bit dirty but came away with the most wonderful little gardens for the wee ones.
Our thanks goes out to Kris for hosting and leading a great workshop (despite a broken arm) and to Alice and Linnea for the delicious refreshments.

MEETING MINUTES, Thursday, March 12, 2009
Secretary’s Report: Mary gave an overview of last month’s minutes, stating they had been posted in their entirety on the website. Minutes were accepted as presented with a motion by Mary C. seconded by Wanda. Mary also brought an Artesian Tea Ball demonstration for the evening.
Treasurer’s Report: There was no treasurer’s report due to the absence of Becky Tessman.
Old Business: Kris reported that Janet has arranged for 3 hosts for our community garden tour in July thus far: Mary Griesbach, Mary Charmoli and Virginia Hennessey. We noted that all these gardens are north of Highway 70! Janet hopes to arrange for more gardens for the tour.
New Business:
Mary Charmoli is this year’s Plant Sale Chairman, the sale being held on the Saturday of Big Gust Days weekend, June 6, 2009 8-noon or until sold out. Set-up will begin at 6:30. Mary will send out an email reminder of the needs to pull this together and how various members can contribute plants, time, other items or all of the above.
Kris reviewed an article in the current issue of Northern Gardener magazine about the best new annuals for 2009.
We then broke for refreshments provided by Pam and Wanda and also proceeded to share seeds, prepare soil and pots for seed planting. Everyone went home with new crops to nourish during these last days of winter and get thinking about the upcoming growing season.
Our next scheduled meeting is Thursday, April 9, 2009 when Rosemary Burkman will be teaching us how to make hose wreaths. A materials and ideas list was handed out earlier and is also available on our website. Refreshments will be provided by Tim & Becky Tessman.

Planning the plant sale
- Advertising - Our Garden Club Sign (who has it?); Posters/Small signs - to make a couple posters & a few small signs to place strategically around town; Contact the newspapers
- Canopy tent - we have one 10 x 10 and possibly a larger one
- Sawhorses with 2 x 4's for plant displays
- Old tables for plant displays
- An old tarp - great backdrop for large potted plants, shrubs, large clumps of plants (like Iris, Lilies)
- A card table for the check - out table
- Lawn chairs (each person usually brings their own on the off chance that they get to sit down)
- Cardboard boxes - for shoppers to take plants home in
- Plastic Bags - Kris has these
- Cash box & cash
- Pens & notepads for tallying plant sales
- Photos of plants on stakes - we have most of these from previous years but if you have something unusual or a different variety, email a photo to me or tell me the variety so I may print a photo
- Plants: As each of you may be starting some seeds inside, consider a few extra plants to donate to the plant sale. Of course, it's early yet, but as you clean out your flower beds this spring and need to divide, pot them up and bring them along.
Label Guidelines - Please label your plants with as much information as you know, even if is "Common Iris - Yellow." This is a BIG help! Also....
Pricing - generally small plants in 2" to 4" pots run $1. If the plant is larger, increase the price. As the pot and the size, quality or rarity (is that a word?) of the plant increases, then so does the price. Please use even numbers $1, $1.50, $2.00 and so forth.
Other Items - If you have other garden/nature-related items that you'd like to donate, we'd be happy to take them
Volunteers!!!! We ALWAYS need people to come, set up, staff the sale, and clean up. The sale goes quickly and it's a great time to visit with your fellow members and talk about our FAVORITE topic - gardening.
Don't forget your sunscreen and a jacket as the weather changes throughout the day.
(Remember, at the end of the sale, prices are "slashed" and you may go home with some wonderful additions for your own garden at a great price.)

Hose wreath workshop, April meeting
As we get ready for spring we can start collecting the things we will need for this workshop. Here are the items we will need:
- Hose, any color, at least eight feet long
- Plastic ties (zip ties), 8-12 inches long, Rosemary will have some on hand
- Hot glue gun, if you have one, bring it
- Florist wire
- Greenery, vines, pine
- Flowers, any color
- ribbon, to match flowers and ornaments
- Ornaments, small terracotta pots, bird houses, seed packets, lanterns, shovels, pine cones, garden trowels, garden glove (only need one new for each wreath), etc
- Scissors, heavy duty, utility, if you have one, bring it
- Utility knife or saw to cut hose, if you have one, bring it.
This should be a fun workshop, we will meet at the High School as usual.

Fairy Garden Workshop
Bring your own favorite container to plant a fun Fairy Garden! A Fairy Garden is a miniature container garden including fairies, furniture, structures, and living plants which is usually placed in a secluded, quiet, magical area of your garden. Your container must have a drainage hole.
We will provide: potting soil, two or more mini plants or herbs, gravel for pathways/mulch, small flat stones for stepping stones, mini ceramic tiles for patios, and one fairy.
You may want to bring: any other accessories or plants that you wish to place in your fairy garden, such as a fairy house (fairies like their houses made out of natural materials), miniature garden furniture, a small mirror for a pool (fairies do like to admire themselves!), some homemade gates/arbors/ fences from Popsicle or other sticks, extra fairies to keep each other company, any special mini plants you like, etc. Fairies do love herb gardens, so an herb that you can prune like a tree would be great to bring. Get great ideas from the websites below!
Pre-registration is required so we know how much material to get for you. Please contact Kris by May 7th if you are coming. Wear casual clothing as we just may get dirty! If it is raining, we will pot up in the garage.

1 head of cauliflower cut up in florets
1 large potato pealed and diced small
6 or 8 green onions, use white part only, diced
5 or 6 celery stalks, use whitest parts only, diced
2 tables of olive oil or butter or mix

Sauté the green onion and celery in the olive oil/butter in large sauce pan
Add potato and cauliflower, salt, white pepper, nutmeg (to taste—you can add more later)
Add chicken stock
Simmer covered until cauliflower and potatoes are tender (12 to 15 minutes)
Puree in blender (don’t over pack blender) let cool a bit first
Return to pan
Blend the sour cream and yogurt and add to the puree
Season to taste with pepper, salt and nutmeg
Serve slightly warm, at room temp or cold. Fabulous summer soup.

February 2009 Meeting Minutes
The Burnett Garden Club met at 7PM Thursday evening, February 12, 2009 at Grantsburg High School. There were 13 members and 2 guests in attendance: Jane Bell, Yvonne Bergman, Rosemary Burkman, Janet Byers, Mary Charmoli, Lucille Danielson, Pam Davies, Mary Griesbach, Kris Henning, Alma Karels, Cynthia Leonard, Linnea & Rick Seume, Becky & Tim Tessman.
Secretary’s Report: Mary gave an overview of last month’s minutes, stating they had been posted in their entirety on the website. Minutes were accepted as presented with a motion by Janet seconded by Tim.
Treasurer’s Report: Becky Tessman reported a balance of $1,182.62 and her report was approved as read.
Old Business: Kris went over a detailed update on tours planning:
The tour of gardens at Tina Walker’s home arranged by Janet has been changed by request of Tina from June 11 to June 18th. Carpool from HS at 6:30 PM. This will be our regular meeting for the month of June.
June 13 – Iris & nursery tour coordinated by Kris. The optional High Tea experience at Terrace Horticultural Books for groups has been eliminated. Anyone interested in going with Kris and Pam should contact Kris.
July 16 – community garden tour coordinated by Janet. Carpool from HS at 5:30 PM. Janet is still talking with people about who will host.
July 18-19 and 25-26 – Twin Cities Pond & Landscape Tour scaled back to about 20 gardens this year.
July 26-28 – First World Travel Garden Tour in western MN. Linnea and Becky are going. Approx. $300 ea. double occ. Early registration deadline in March. They are mailing Linnea a brochure.
Spooner Twilight Tour – no date yet.

New Business:
Kris reminded us to bring interesting seeds to share and any 6-packs or other suitable seed starting containers to our next meeting, March 12. The Club will purchase seed starting soil for this use, as hopefully many of these plants will be donated to the Plant Sale in June. Mary Charmoli indicated she will be asking for ideas and donation pledges for the June 6 plant sale at next month’s meeting.
Rosemary brought a sample hose wreath and passed out a list of supplies in preparation for our April 9th meeting. It will be posted on our website in case you did not get a copy for yourself.
Kris brought guidelines to pass out for the Fairy Garden Workshop on May 14. They will be posted on our website in case you did not get a copy for yourself.
Kris also reminded us that she forgot to enter the Container Garden Contest in our schedule book. It will be our regular August meeting, Thursday, August 13, 2009. We will meet at Seume’s cabin on Big Wood Lake between 5-6 PM for a potluck dinner as well as the contest. Begin thinking about your winning container!
At every meeting, Melinda Myers’ donated copy of “The Garden Book for Wisconsin” is available for checkout by members.
Janet acknowledged Pam for a GREAT job developing and updating our website. Thanks, Pam!
Mary Griesbach was the featured speaker for the evening, having prepared an interactive presentation of growing herbs for teas. A wide variety of loose-leaf herbs were made available for personal infusions accompanied by a fine host of treats (scones with complimentary spreads, chai cookies, shortbread and tea sandwiches) prepared by Mary Charmoli. We all enjoyed the refreshments very much – thanks to the Marys! At the end of the evening, Becky and Tim presented a ‘thank you’ to Mary Griesbach which included 3 Artesian Tea Balls and the instructions on how to make them “bloom”! Mary will bring to the March meeting for all to experience and enjoy. She is also appreciative of the gift certificate to Village Floral!
Our next scheduled meeting is Thursday, March 12, 2009 where we will be starting seeds for the upcoming gardening season. Refreshments will be provided by Pam Davies and Wanda Biorn.

January 2009 Meeting Minutes
MEETING MINUTES
Thursday, January 8, 2009
The Burnett Garden Club met at 7PM Thursday evening, January 8, 2009 at Grantsburg High School. Present were the following members: Rosemary Burkman, Janet Byers, Lucille Danielson, Pam Davies, Alice Erickson, Mary Griesbach, Kris Henning, Ruth Johnson, Linnea Seume, and Mary Ann White.
Secretary’s Report: there was no secretary’s report from Mary Griesbach, as this is the first meeting of the new term. Mary apologized for not getting the meeting announcement in the newspaper for this month.
Treasurer’s Report: there was no treasurer’s report as Becky Tessman was not in attendance. We agreed we had money in our account.
Old Business: Holiday in the Park: thanks to Tim and Becky Tessman for setting up a display on behalf of the Garden Club and also to Janet Byers who provided some pots.
Siren Garden Tour Cooperation: Janet reports that she was in contact with their president, Carla Phillips. Carla says they cannot give a definite answer until their first spring meeting. Janet feels the answer will likely be “no”.
New Business: Summer Tours dates shared by Kris Henning as follows:
June 11 Changed to June 18– tour of gardens at Tina Walker’s home arranged by Janet. Carpool from HS at 6:30 PM. .

Pam’s Chicken Enchiladas
Pam’s Chicken Enchiladas
You will need a rectangular backing pan, lightly greased (I use olive oil)
6 – 10 flour or corn tortillas (sometimes I do half flour and half corn)
1 can Old El Paso of refried beans
1 packet of Old El Paso taco seasoning
1 – 2 cans of Old El Paso mild enchilada sauce
1 – 2 chicken breasts cooked and shredded (I boil bone in breasts in a little water for about 20 min then save the broth for seasoning the chicken—see #1 below)
1 cup + shredded cheddar cheese or other cheeses as you like
Sour cream and hot sauce as you like
chopped green onions or diced green or black olives to garnish
1. Season the shredded chicken in a skilled with about ½ - ¾ cup of water or chicken broth and sprinkle on all or part of the taco seasoning (I use half only for 1 breast). Mix up and let simmer down until almost dry.
2. Warm the refried beans in the microwave for about 3 minutes.
3. Spread 2-3 table spoons of refried beans on the tortilla in the middle going in one direction from edge to edge so that there is a strip of beans in the middle of the tortilla. One can of beans should do 6 – 10 tortillas depending on how much you like to put on.
4. Distribute the seasoned shredded chicken on top of the beans so that you have enough for all the tortillas then do the same with the shredded cheese. If can use some of the chopped green onions or diced olives also.
5. Fold one flap of the tortilla up over the beans, etc., then roll up being careful not to tear the tortilla and place in the greased backing dish snugged up together to fit them all in.
6. Spread the enchilada sauce evenly over the tortillas. Be sure all the tortillas are moistened with the sauce but it is not necessary to cover them completely in the sauce.
7. Cover with foil and bake at 325-350 for 20 – 25 minutes or until warmed completely through.
Let set for 10 – 15 min then serve with sour cream and hot sauce and garnish.
I like to serve this with a side of Spanish rice, some shredded lettuce with chopped tomatoes. This is always a popular dish at pot lucks and tastes great reheated.

RITZ CRACKER DESSERT
We enjoyed this wonderful dessert after our Rhubarb Leaf/Hyper-Tufa workshop. It was delicious!
